
I may be on vacation but that won’t stop me from cooking. The kitchen tempted me to make these two beautiful loaves of banana bread for my longtime friend @jaeolaf and I just couldnt resist.
This is where we ended up.
These are the things we used
6 large bananas
1/3 cup brown sugar
1/4 cup browned butter
1 tsp salt
1 egg
1/2 teaspoon vanilla extract
1/2 teaspoon nutmeg1 cup flour
1/2 cup oatmeal
1 teaspoon baking powder
1/4 cup blueberries
1/4 cup chocolate chips
sliced strawberries
This is what we did
Mix the bananas, brown sugar, browned butter, salt, egg, vanilla extract, nutmeg all together
Then add the flour, oatmeal, and baking powder
Mix till just combined
Add in the blueberries, chocolate chips and mix till even spread
Pour into a loaf tin
Top with sliced strawberries, more blueberries and chocolate chips
Bake at 165c for 1 hour or till a toothpick inserted comes out clean
Remember when you used to read those Enid Blyton novels and they’d say “she put a pie on the windowsill to cool?” I never got that till I left Nigeria. Why would anyone put food on the windowsill? So that flies and birds can come and destroy it abi? Lol. Just put these two out and was transported back to those days.
Anyhow, bread is ready, if you’re in Nottingham I might be convinced to share a slice with you. Lol.
