Here’s a confession, Pasta is my absolute first love! It makes me super super happy.
My love for pasta is extreme to the point that I make my own pasta from scratch. But I’m not going to make you guys do that. What I am going to do is give you a super simple pasta recipe that will convince everyone that you’re a super chef. I’m talking convince your bae to propose and your husband to increase your housekeeping allowance tinz. Give your mother in law mede mede and she will love you for life.
So here’s what you’ll need.
1 tbsp freshly squeezed lemon juice
1 tbsp Olive oil
2 tbsp Butter (melted)
4 garlic cloves (chopped)
1/2 bunch parsley (chopped)
1/2 bunch basil (chopped)
1/2 tbsp Red pepper flakes
8 strips thick cut bacon (cute into 1 inch pieces)
1 pound squid (cute into 1 inch cubes. keep tentacles)
1/2 pack pasta (tagliatelle is perfect but really any long pasta will do)
Salt & black pepper to taste
Cook pasta in salted boiling water till al dente (still slightly firm in the middle). Drain and toss with a little olive oil to prevent it from sticking. Set aside
In a large skillet, cook bacon ( I usually cook my bacon in an air fryer because it gets rid of all the excess fat for me) till brown and crispy on the edges. Transfer bacon to paper towel to absorb excess oil. Drain bacon fat from skillet and add olive oil.
Cook squid in olive oil till no longer translucent. Add garlic and cook for 1 minute.
Put drained pasta into skillet. Add bacon, melted butter, lemon juice and red pepper flakes. Combine well and cook till pasta is completely reheated. Add chopped basil and parsley.
Serve immediately. Garnish with parsley and basil.
For you wine drinkers serve this with a nice chilled pinot grigio and your life is complete.
