I LOVE WAFFLES!!! Whenever I see a Waffles vs. Pancakes argument pop up online, I just shake my head at those people who think pancakes are a real thing. Poor misguided fellows.
It’s been a while.
I feel shame. But you should be glad that it’s been a while because that means we’ve been working hard!
The HITK team is growing and we just paid rent for our new space last week. It’s amazing.
But all that hard work makes for one very exhausted Imoteda so I took two weeks off work to relax before the December rush comes upon us. Today is Saturday and I’ve spent most of the day in bed. I feel almost guilty but I know I need the rest.
I still have to eat though and after making these amazing waffles for myself and the offspring, I thought why not share this with the team?
These waffles are extremely easy to make. All you need to do is dump all the ingredients in a bowl and whisk till smooth. For real. There’s no yeast so no need to wait for them to rise but you get the same crisp exterior and moist interior you get from yeasted waffles.
You can adjust the sugar to taste, make them a little sweeter or a little less sweet. Also these work great for chicken and waffles. I tend to omit the sugar when I use them that way so it’s a more savory dish overall.
Enough with the English. On to the recipe!!!
1 ¾ cup whole milk
½ cup vegetable oil
2 cups all purpose flour
1 teaspoon salt
¼ cup sugar
4 teaspoons baking powder
1 teaspoon nutmeg
1 teaspoon cinnamon
1 tablespoon vanilla extract
Add all your ingredients to a bowl and whisk thoroughly till smooth. The batter will start out lumpy, just keep going with your whisk. Use a whisk, not a spoon or a spatula or your hands. A whisk. If you don’t have a whisk, leave my blog!! (I kid but every kitchen need a solid whisk)
Plug in your waffle iron. Coat with cooking spray or vegetable oil.
Using my kenwood, it takes about a ladle (1/2 cup) of batter for one waffle with nothing spilling out the sides.
Cook your waffle for 4-6 minutes till golden brown.
Serve and top with anything!
For today I used bananas, grapes, nutella and my home made caramel sauce.
