Simple chicken bake

Sorry these pictures suck but the meal was sooo good. I had to post it. I will recreate it sometime in the future because it’s so easy.

I cook for a living and while I absolutely LOVE cooking sometimes I get home and wonder why my people insist on eating. And by my people I mean my needy daughter. Say hi to Rayne people:


Please don’t ask me why we;re in a laundromat. Actually it’s funny, I went to my sister’s grad and had to get right off the bus (yes I take a twelve hour bus rather than fly two hours. Don’t judge) and go to her grad. Our clothes were hella rumpled so I went to a laundromat to get them ironed. They charged me $10 dollars. TEN WHOLE DOLLARS!! Thieves. Ah wells back to today.

So on this particular I was feeling super lazy and didn’t want to cook but the children must eat so I tossed together this one dish meal and it was sooo good.

Here’s what you’ll need


4 medium carrots

2 medium zucchini (courgettes)

4 chicken legs (separated into thighs and drumsticks)

1 tbsp chilli powder

1 tbsp dried onions

2 tsp salt

2 tsp black pepper

2 tbsp veg oil

2 tsp ground cumin

1 cup chicken stock


Preheat oven to 350f/180c. Make sure you put your baking dish in to preheat with the oven.

Put your chicken into a large plastic freezer bag, add all your spices, dried onion and two tablespoons of vegetable oil. Seal it and shake it until the chicken is evenly and completely coated with your seasoning. Set aside

Cut your zucchini in half and scoop out the fibrous insides and seeds. Cut into 1/2 inch cubes and do the same with your carrots.

Spray your baking dish with nonstick spray and lay your veggies on the bottom


Place your chicken on your veggies, try and nestle them in so the bottom half is sorta submerged in the veggies.


Add your chicken stock, cover with foil paper and place in the middle rack in your oven.


Cook for 45mins – 1hr, turning the chicken once. Once the chicken is tender cook uncovered for 15 minutes under a broiler to get that beautiful dark color on your chicken.

Your veggies should be nice and tender and would have absorbed all the flavor from your chicken and seasonings. You can eat this on it’s own or serve it as a sauce over white rice, bulgur, quinoa… any grain of your choice. Enjoy!
