So I fell off that fitfam wagon quicker than Ciara got over Future. But I’m back at it (sort of). I promised to share. Today’s meal made me super happy and was under 400 calories. I took the time to calculate everything by weight and all. Mostly for Instagram to be honest. It’s super simple and super delicious.
Purple cauliflower 1/2 cup- 37 calories
1/2 cup carrots steamed- 27 calories
2 small lamb chops- 200 calories
1 cup beef broth- 25 calories
Here’s a quick recipe. It’s super easy to make.
Trim off fat and any cartilage or loose bones(sometimes the butchery is sketchy in naija)
Preheat oven to 200c
Heat up two tablespoons of vegetable oil on a pan
Season chops with salt and freshly crush black pepper literally on both sides
Brown the chops on all sides on very high heat. You want to create a nice dark brown crust.
Transfer your chops to the oven and cook for 5-15minutes depending on how you like your meat. I cooked these for a full 15 minutes cause my daughter doesn’t like pink meat.
Take chops out of the oven and place them on a plate or board to rest.
Cut your cauliflower into florets. Toss the stems or save them for goats (my grandma keeps goats. Don’t judge )
Transfer florets to a pot and add your cup of beef broth. Bring to a boil then reduce to a simmer till florets are extremely soft. Transfer to a blender with a quarter cup of broth and purée till smooth. Season with powdered garlic, salt and black pepper
Steam with water.
That’s it guys. Super simple and super delicious. I served it with a bit of beef jus but the mash was so smooth and creamy that I kinda didn’t need the jus.
Also I used boxed broth because… Lazy
